County Fest



Well last Saturday was South Jordan County Fest. It was fun to get out and enjoy a beautiful summer evening. We went to dinner at our favorite spot... Cafe Rio! After dinner we headed over to the park and walked around the booths and it was fun to see some fimular faces. It was nice to see some friends and chat. Also they had Darryl Worley there, He put on a great concert and we had a blast!

Volleyball



Greg and his older brother Brian played in a volleyball tournament last saturday. I was able to sneak away for a long lunch break and watch a match and a half... and get some photos! They play so well together and they are so fun to watch! They play again this Saturday and they will do great!

Recipe!

Okay so Chels wants the recipe for the cheesecake and I hope someone else makes it as well. It is very easy!
Turtle Cheescake
1 1/2 oreo cookie crumbs
1/4 melted butter

Mix together and press into a 9" spring form pan and put into freezer.

Filling:
24 oz. softened cream cheese
1 1/4 cup sugar
1 tsp. vanilla
4 eggs
1/4 cup crushed pineapple. Drain then squeeze out remaining juice.

Mix cream cheese, sugar and vanilla together until smooth, add eggs one at a time, mixing in each one before adding the next. Beat at medium speed for 5 min then add pineapple and mix well.

Pour into the crust and sprinkle top with semi-sweet chocolate chips and pecans, about 2/3 cups of each. Bake in a 350 degree oven for about 50 minutes until the center is set and a toothpick comes out clean.

Allow to cool to room temperature then refrigerate for several hours. Leave it in the pan until ready to serve. Makes about 12 moderate sized servings.

Turtle Cheesecake



Well last week I decided to participate in my new wards Relief Society activity. It was a ward bake off, great I thought to myself I wonder if I pick something up at the store if anyone would notice?!!! I figured they would notice and I might as well attempt something good. So I got a recipe from Greg's mom... Turtle Cheesecake. I had never made a cheesecake and wondered how it would turn out. Greg was a good sport and helped me put it all together the night before. I showed up alone and very intimated! {Believe me I did have my game face on but I was ready to be completely showed up by these house moms with experience!} I will keep the boring details out of the story and get to the most exciting part...I GOT FIRST PLACE! What a surprise to everyone mostly me! It was great! I was so proud of that first place prize. I decided it was so wonderful I would make if for Father's Day since cheesecake is my dads favorite. It was just as good the second time around.

Well I know it was been forever since I posted anything. Things have been so busy! It takes longer than I thought to get things settled and organized. Things are in order... I'm back to work and Greg is back to school and work so we are very busy. I'm still waiting to get my wedding photos back so there are lots more pictures to come!
